Why is it best to use a plastic vegetable knife as opposed to a metal knife when cutting fruits and vegetables? and is it best to purchase a blender with a metal or plastic mixing blade?
Well, part 1, in all honesty, this is not an area that I had previously researched with any depth but I don’t know of any health related issues between the two. I have read from certain chefs that metal knives make certain vegetables (like lettuce) turn brown (or oxidize) quicker when slicing. He’s a link to get more specific in that.
Part 2, and again, sorry, but I don’t have a lot on this. It just seems like metal is sharper and longer lasting but beyond that, no health related concerns that I have seen. Most times when I see plastic used inside the blender itself it is with plastic mixing paddles, turning dough and such, but not really mixing blades. As always, I will welcome additional comments or insight from our other readers.
